summer fried rice

Adapted from Red Wagon Kitchen

2 cups jasmine rice
3 cups water
2 tbsp butter
1 bunch scallions, sliced
1/2 cup corn
1/2 cup red pepper, diced
1/2 cup peas, defrosted
fish sauce, a couple glugs
1/2 lime, squeezed
pepper, to taste

cook rice as directed, with butter, remove and add to a bowl with remaining ingredients. Toss, taste, and serve.
