Banana bread is definitely one of my favorite baked goods in the whole world. It reminds me of my mom in the kitchen mashing bananas and chopping walnuts, only sprinkling them on half the loaf, and then the smell that filled the house one hour later.
Sometimes I wonder how I can create new recipes or try completely new and impressive techniques, but it's a comforting feeling to rely on a classic. Here you have it, good 'ol banana bread.

Classic banana bread 

1 cup sugar
1 stick buter
2 large eggs
3 ripe bananas
1 tbsp milk
1 tsp cinnamon
2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt

Preheat the oven to 325 F.
Cream the sugar and butter in a large bowl until light and fluffy. Add the eggs one at a time, beating well after each addition.
In a small bowl, mash the bananas with a fork. Mix in the milk and cinnamon. In another bowl, mix together the flour, baking powder, baking soda, and salt.
Add the banana mixture to the creamed mixture and stir till combined. Add dry ingredients, mixing just until flour disappear, DO NOT overmix.
Pour batter into prepared pan or 4 small loaf pans. If using a regular loaf pan bake for 1 hour to 1 hour 10 min (the smaller ones 40 min), cool on a rack for 15 min. Remove from pan and let completely cool before slicing.
