Power Bread

My roommate and I have been making a conscious effort to eat clean and follow a strategically intense workout regimen. It's been 10 days and we kicked off the first 5 with a raw food cleanse in an attempt to rid our bodies of unwanted toxins. Detox can be a drastic shift for the body at first. I loved starting the plan like this because you're left with a desire for clean food, an understanding for hunger, and a slightly smaller stomach. I feel my best when I eat mostly raw foods but my craving for protein, especially post workout, is unmatched. I'm determined to eat a paleo diet. Now I'll be experimenting and creating recipes for continuos motivation in my efforts to get in the best shape of my life.

Kt's Paleo Banana Bread
2 cups almond meal
1 cup quinoa flour
1 tsp baking powder
1/3 tsp sea salt
Dash cinnamon
2 bananas, mashed
1/4 cup local honey
1/4 cup unrefined coconut oil, melted
3 eggs
1/4 cup raw pumpkin seeds

Preheat oven to 350 degrees F. Mash bananas, add eggs and whisk vigorously. Add honey and oil, stir until well combined. Combine dry ingredients and then add the wet mixture to it. Add pumpkin seeds or any other nuts if you'd like.

Cashew Coconut Milk
1/2 can coconut milk
2 cups water
4 dates
1/2 cup cashews

Combine ingredients and let them soak in the fridge overnight, then place in the blender and process until smooth!!!
