Naughty, Naughty Eggs

I made these little devils for the Super Bowl XLVII party I went to this past Sunday and oh were they a hit! I made a ton but feel free to cut back this recipe for a smaller appetizer. 
My Ridiculously Deviled Eggs
1 Dozen Cage-free Eggs
6 tbsp mayonnaise
3 tsp spicy mustard
1 tsp lemon juice
1 tbsp bacon fat
2 tsp relish
1 tsp paprika

Hard boil a dozen eggs. I find it most efficient to place eggs in a large pot half-filled with water and bring it to a boil. Once a rolling boil is reached, turn off the heat, cover the pot, and allow the eggs to rest for 15 minutes. My pet-peeve is that damn greenish ring around the yoke in an overcooked egg, don't do it. Ever.
After cooking the bacon and pulling it from the pan I realized that there was no way I could allow all that bacon flavor go to waste, it was going in. 
Process egg yolks, bacon fat, mayonnaise, spicy mustard, lemon juice, relish and paprika. Fill the egg whites with the yolk mixture. Top with chopped chives and crumbled cooked bacon.

  3. I am wanting to make these for my family tomorrow but my uncle is allergic to lemon juice. Do you think leaving it out would be ok?
