Bacon cakes

Would you agree that this is a great idea?
Blueberries, bacon, maple syrup, and a fluffy, spongy pancake to soak it all up. YUM. These were gluten-free but feel free to use your favorite pancake recipe instead. This is an easy way to compromise with both sweet and salty for breakfast, it's a win-win.

Bacon Blueberry Pancakes
1 cup Tootsie's Gluten-free pancake mix
3/4 cup milk (I use organic lactose free or Almond milk)
1 tbsp oil
1 egg
3 slices of bacon
1 pint blueberries

Combine pancake ingredients and let sit for 3 minutes, add more liquid if necessary, do not over stir! Cook up the bacon and set aside on a paper towel. Once cooled, crumble the bacon.
Heat a skillet and coat with butter, add batter and drop bacon and blueberries into pancakes. Cook, flip, cook. Top with hot maple syrup and fresh blueberries. ENJOY!
