6 & Perfect

ccupcake9

This was two weeks ago- I'm going to be honest right out the gate, haha. No need to give an explanation as to why I haven't updated, all I need to say is school. Thankfully, I completed all reports, assignments, presentations, and final exams as of yesterday and I couldn't be more thrilled or proud of myself. I wonder if I'll procrastinate less next time... most likely not.
These cupcakes were specially requested by Abby Day for her sixth birthday. All I wanted to do was give the princess exactly what she wanted for her perfect little day. I must take credit for the Spa Party idea that Aimee carried through for Abby and 6 girlfriends. It was adorable to say the least; mani's and pedi's, face paint, makeup, hair, and jewelry making.
So everybody loves cupcakes, right? I mean they're handheld cakes, whats not to love? To be honest they are my least favorite sweet treat to bake. I'd rather make an all-out cake, layered bars, outrageous cookies, or pretty much anything else. But I must say, these are the perfect cupcakes. I used Amy Sedaris' recipe for vanilla cupcakes and buttercream frosting which is critically acclaimed as the 2nd best cupcake recipe ever. Fact.

Amy Sedaris' Cupcakes
1 ½ sticks of unsalted butter
1 ¾ cups of sugar

Beat well, then add:

Add 2 large eggs
2 Teaspoons of pure vanilla
½ teaspoon of salt
2 ½ teaspoons of baking powder
2 ½ cups of flour
1 ¼ cups of milk

Beat well, fill cups, and bake at 375 degrees for 18-20 minutes. You should get 24. I get 18, 'cause I'm doing something wrong.
Frosting

1 stick of unsalted butter
1 box of Domino confectionary sugar
¼ cup half-and-half
1 teaspoon of pure vanilla

Whip for a while, color if you want.
