poppy waffle

Multigrain Lemon Poppy seed Waffles 
recipe by Kt's Kitchen 

                                                       1/2 cup whole wheat flour                                          1/2 cake flour
                                                       2 tsp baking powder                                                   pinch of salt
                                                       1/4 cup flax meal & wheat germ                                1 egg                     
                                                      (4 tbsp each?)                                                             1 cup almond milk
                                                       2 tbsp apple sauce                                                     2 tbsp walnut oil
                                                       2 tbsp lemon juice                                                     1 tsp poppy seeds 
Combine wet ingredients in a large bowl and mix well. In a separate bowl add dry ingredients and sift with a fork. Slowly add the dry ingredients to the wet and stir until just combined. Do not over stir. Pour into a preheated and stick-free waffle maker. Top 'em with anything you'd like. 

LUNCH:

The super salad: spinach, carrots, peas, alfalfa sprouts, and cucumber. The best part was the fantasmic (and easy) dressing. Walnut oil (1tbsp), tahini (1tsp), half a lemon. BAM! Why hadn't I thought of that before? Deliciousness.
