Whole Grain Strawberry Crumble Bars
Early strawberry season this year, they've overflowing the shelves at the grocery store at ridiculous sale prices. I bought 3 lbs of gorgeous, deep red fresas a couple days ago to make preserves. Looking at the jars of fuchsia jelly inspired me to bake (surprise!) so I started the recipe hunt and ultimately decided on some delicious bars. I like making bars, they just make me feel good. This was seriously an experiment. I adapted the recipe from The Other Side but I modified it a lot because I was in the mood to have some baking fun. So happy with my creation: a deliciously nutritious breakfast bar/desert.

I blended my preserves into a jelly for the filling of the crumb bars

Oat topping w/ brown sugar, flax meal, wheat germ, almonds, and some smart balance to stick it all together
