Scone + muffin = scuffin

The dough was awesome and sticky, definitely a firm, pliable dough rather than a cookie or cake batter. So I formed disks and flattened them out my new silicone baking sheet ;)

Carrot Cake Power Scuffins
Adapted from Oh She Glows 
1 cup whole wheat pastry flour
1/2tsp baking powder
1/4 tsp salt
1tsp cinnamon-1/4 tsp nutmeg-1/4tsp ginger1 tbsp walnut oil
1/2 cup agave syrup
1tsp vanilla extract
flax egg
1/2 cup rolled oats
1 cup shredded or grated carrot
1/4 cup raisins
1/4 cup walnuts
 NOTES: This is my first attempt at this recipe and I will try it again soon. I will change: Too much spice, take it down a notch w/ the ginger and nutmeg. 1 tbsp walnut oil and add 2 tbsp applesauce for moistness. More raisins. I'll use a real egg instead of a flax egg also. Until next time!
