Sunflower Power

I've been wanting to make my own veggie patties for a while because I won't buy them at the store, I just don't agree with all the ingredients in them. Last time I made black bean burgers they came out delicious although slightly mushy. This time I ground up sunflower seeds, added brown rice, and then some veggies. I added a flax egg to help it all hold together, for the beneficial fiber, and to make them vegan. I absolutely love the nuttiness of these guys, they are so so so tasty. Sunflower Burgers
Kt's Kitchen recipe
1 cup sunflower seeds
1 cup brown rice (cooked)
1 tbsp tahini
1 tbsp flax meal mixed with 3 tbsp water
2 medium carrots, diced
1/2 cup peas
6 oz black beans (half a can)
1 tsp cumin
1/2 tsp oregano
1/2 tsp thyme
salt & pepper to taste

Preheat oven to 375.
Drop sunflower seeds in your food processor and pulse until it turns into sunflower meal. Add carrots, rice, tahini, spices, and pulse a couple times. Then transfer the mix to a bowl and add the flax egg, beans, and peas, mix in. Taste, have fun, add some more spices or what have you. Form into six nice round patties. Arrange them on a tray and put them in the oven for about 20 min on each side, or until a beautiful golden brown. After they cool pop those puppies in the freezer and enjoy them whenever you want. There you have it. Sunflower burgers. 
Next time I might not puree the mix as much and keep the big chunks of carrots and rice.
