Not extremely exciting but after running 4 miles I just wanted a protein packed salad. Romaine lettuce topped with curried quinoa, hard-boiled egg, alfalfa sprouts, peas, and a generous sprinkle of sunflower seeds. My new favorite thing is inventing salad dressings. For this green goddess I whipped together a tahini-lemon vinaigrette that worked so well with the curry flavor. Mmm, it was delicious!
